I can see the mashed potatoes as being a good thing too. I made this today. It was great. I had several sprigs of fresh thyme around so I too used it instead of the sage. Turned out great. Served with some fresh asparagus that I picked up at the market. Very rich, savory and filling. It is going to be one of the things I keep in my menu rotation. I would say that one should use whole chicken with the bones. You want the flavor from them in the broth. Using skinless chicken breasts would be very bland. I also used some low sodium/fat chicken stock instead of the water.
